The Dolcetto is an indigenous Piedmontese grape for long time majorly planted in our area. This varietal requires good exposure though not too warm in order to preserve a good acidity. We make a limited production of Dolcetto from a single vineyard Bricco Ambrogio, in Roddi Village, where the vines are over 60 years old.
Purple color, fresh and delicate aromatics of cherry, blueberry, spices and flowers. The structure has a lightness and brightness in it. Well defined by good tannins and harmonious acidity this wine has a pleasant freshness and intriguing character. Dolcetto d’Alba is the everyday wine usually combined with the typical Piedmontese antipasti.
Winemaking
Vinification: Destemming and crushing. Alcoholic fermentation in stainless steel and short maceration for a delicate extraction with temperature controlled and indigenous yeasts. Malolactic fermentation in stainless steel followed by several racking to remove the sediments and maintain purity of flavors. Natural tartaric stabilization over the winter.
Aging: stainless steel before bottling.
